Description:
Matcha is literally "powdered tea".
Matcha is made from the same leaves as Gyokuro, shaded as those leaves are but only the
finest of leaves are reserved for making Matcha. It is picked early in the
year and laid out flat to dry instead of being first rolled like Gyokuro. This
allows the stems and veins of the leaves to be removed by hand before it is stone
ground, also by hand. It can take up to an hour to hand grind the leaves into 30g
of fine matcha powder.
Matcha is brewed right in a wide cup by being whipped into
a froth with a bamboo whisk. Matcha is used in the traditional Japanese tea ceremony. It is highly balanced in flavour.
